BATTERED OYSTERS WITH LEMON CREME FRAICHE AND CHIVES

INGREDIENTS

  • 1/4 C plain flour
  • 2/3 C soda water (chilled)
  • 6 Pacific oysters (farmed in Tasmania)
  • 1 bunch chives, finely chopped
  • 1 lemon, zested
  • 2 tbsp creme fraiche
  • vegetable oil

Step 1: In a small saucepan add oil (4-5cm deep). Heat to medium.

Step 2: In a bowl add flour and soda water and whisk until a smooth batter is formed. Season with salt and pepper.

Step 3: Add half of the lemon zest to the creme fraiche and set aside.

Step 4: Remove oyster from shell and place in batter. Once coated in batter add to hot oil and cook for 3-4 minutes.

Step 5: Remove oysters from oil and season with salt and pepper.

Step 6: Place a small dollop of creme fraiche in the shell of each oyster, add fried oyster. Top with another small dollop of creme fraiche and garnish with chives. Enjoy!
