Abalone Pan Fried in Miso Butter

If the abalone needs to be cleaned, you need to cut the adductor muscle from the shell. It is attached by a piece about the size of a 50-cent coin. Discard the guts. If bin night is not soon then freeze it before binning as it will smell strongly quickly.

INGREDIENTS

2 whole abalone
50 grams butter
2 tablespoons white miso paste

Salad
1 cup cooked rice noodles
1 cucumber
1 large carrot
2 spring onion
1 cup sprouts
2 cups rocket leaves
2 tablespoons extra virgin olive oil
1 tablespoon light soy
1 tablespoon rice wine vinegar
2 tablespoon sesame seeds

Slice the abalone as thinly as you can across the muscle. Bash the slices with a meat mallet until thin.
Prepare the salad by slicing the cucumber, sprouts, carrot, and spring onion. Toss the sesame seeds, rice noodles and rocket leaves through the vegetables. Whisk the olive oil, soy, and vinegar together and dress the salad.
To cook the abalone, flash fry with miso paste and butter in a medium hot pan, it only takes a minute so make sure everything is ready to go when you start.
Serve this abalone with a noodle salad for a meal or just hand it around as a starter as is.
